As many of you know, Oxford offices across Canada have their own beehives along with beekeepers that help them thrive. The hives are managed by our partners Alvéole who install and care for beehives in many urban locations in order to educate, reconnect city-dwellers with nature, raise ecological awareness, and help build more sustainable cities.

To mark Earth Day on April 22, we organized a live event led by two of our beekeepers, Angela and Andie. The event included a 30-minute workshop and a live Q&A.

Gastronaut, artist and eight time Guinness World Record holder, Bob Blumer is the creator and host of the television series’ Surreal Gourmet and Glutton for Punishment, and a producer and host of World’s Weirdest Restaurants. His shows air in over twenty countries worldwide.

During the live, Bob showed us how to make his creamy carbonara with double pancetta – if you want to follow along at home, you can find the recipe below.

  • 1 Tbsp olive oil
  • 8 ounces thick-sliced pancetta or thick-sliced bacon, cut into ¼ inch pieces
  • 2 garlic cloves, minced
  • 2 tsp pepper
  • ¼ tsp chilli flakes
  • 1 cup freshly grated Parmigiano-Reggiano (about 4 ounces) + extra for finishing
  • ½ cup freshly grated pecorino (about 2 ounces)
  • 1 best available egg + 3 egg yolks
  • Salt
  • 1 pound spaghetti
  • 1 cup chopped parsley
